Puerto Rican Tembleque is a coconut custard recipe that is typical in Puerto Rico. While it can be found year round, it is most popular during the holiday season. Super easy to make and very yummy! It takes about 20 minutes to prepare. You will need some small molds, and cooling in them advance will help.
Ingredients Needed for Puerto Rican Tembleque:

- ½ cups Cornstarch
- 3 cups Coconut Milk
- ⅔ cups Cinnamon Cane Sugar
- ½ teaspoons Salt
- 1 teaspoon Vanilla
- Cinnamon as a garnish
Directions:
In a saucepan add cornstarch a about ½ cup of the coconut milk. Once the cornstarch dissolves, add the balance of the coconut milk and the rest of the ingredients.
Bring to a boil stirring constantly until it thickens.
Once thick, start pouring into the molds. Have it cool to room temperature and then put into the refrigerator so that it firms up more.
It should be firm in a couple of hours and then remove from the mold using a knife around the edges. Garnish with cinnamon (or nutmeg) and enjoy!
