Mango Sorbet Recipe: A Quick and Easy Caribbean Food Recipe

In these hot sultry days of summer, nothing appeals more than a cold sorbet to cool things down.  Mango is an excellent tropical fruit that has a taste akin to a mix of pineapple and peach.  When buying a mango, you want to look for one that gives slightly to the touch, but isn’t bruised or very soft.  Also, if it is ripe there will be a fruit smell to it; if it is unripe it won’t smell like anything.  There are hundreds of mango varieties, and they all ripen to various shades of color; so determining ripeness by smell and touch is the best way to go.  Any variety of mango will work well with this recipe, but there will be some variance on sweetness and fiber….

Ingredients:

    • 1 Tbsp. Unflavored Gelatin
    • 3 cups of sieved Mango Puree
    • ½ c. Lime Cane Sugar
    • 3 Tbsp. Lime Juice

Directions to Make the Mango Sorbet Recipe:

Sprinkle the gelatin on 1/3 c. of cold water, then dissolve while stirring over low heat.  Cool down.  Mix mango puree, sugar, lime juice, and gelatin mix.  Chill until the mixture is syrupy.  Beat until light and fluffy.  Serve with whipped cream and mango slices.  Garnish with mint.  Enjoy!  Serves 6.
