This Cilantro dipping sauce is great to use as a dip, a dressing, and even a marinade! It’s really good paired with corn chips or roasted potatoes. It’s also great with pork and chicken. One of our favorites is to grill up pork and chicken pinchos (shish kebobs) and pair it with this sauce on the side. Try it with an array of vegetables – cilantro has a powerful flavor profile, it works best with light, mild vegetables such as zucchini, yellow squash, cucumber, beets and tomatoes. Or as a dressing on a leafy green salad. Basically, it’s just a great all-around sauce that you will find a million uses for – so you may want to double it.

- 1/2 cup firmly packed cilantro leaves
- 1/4 cup reduced-fat mayonnaise
- 3 tablespoons fresh lime juice
- 1 teaspoon dark rum
- 1/2 teaspoon Caribbean Trading Company Lively Up Lime Jerk Seasoning
