The Bushwacker is sort of like a chocolate Piña Colada, and is considered a staple of Virgin Islands cocktails recipes. Like many famous cocktail recipes, the origin of the Bushwacker recipe is unclear. Some say it was invented in Pensacola, Florida after a visit to St. Thomas. Others say it was invented by a bartender at the Bolongo Bay Resort in St. Thomas. Either way, this cocktail hits all the right notes of cold, rum, chocolate, and coconut. It is very easy to make, so mix it up and enjoy!
