Serves: 2

Prep Time: 10 minutes

Cook Time: 45 minutes

 

Ingredients Needed to make Mango Habanero Wings Recipe

 

Directions:

  • Preheat oven to 400ºF
  • In a small mixing bowl, combine flour, garlic powder, pepper, and salt.
  • Pat the chicken wings dry using a paper towel.
  • Roll them in the flour mixture until completely covered
  • Place chicken wings on a wired baking sheet (with a pan for any drippings below)
  • Bake at 400ºF (220ºC) for 45 minutes, flipping halfway for even cooking. The chicken needs to reach an internal temperature of 165F.
  • In a sauce pan on low heat, mix the Mango Habanero Wing Sauce along with the honey until fully combined.
  • Coat the wings with the sauce and then put them on a baking sheet to bake another 8-10 minutes at 450ºF

Serve the mango habanero wings along with celery and carrot sticks and some ranch sauce for dipping. Enjoy!

Ingredients:

    • 1 pound conch meat
    • ¼ cup butter
    • 2 spring onions, chopped
    • 1 carrot, chopped
    • 1 celery stalk, chopped
    • 1 sweet potato, peeled and diced
    • 1 red bell pepper, chopped
    • ½ fresh corn kernels
    • 2 tablespoons flour
    • 1 quart half-and-half
    • 14 ounces unsweetened coconut milk
    • 2 cups fish stock
    • 1 ½ tablespoons fresh grated ginger
    • 1 ½ teaspoon Caribbean Trading’s Scotch Bonnet Passion Punch Crushed Pepper Sauce
    • 1 cup fresh cilantro, chopped
    • Salt and pepper

Directions to Make this Conch Chowder:

1. Cook conch meat in a pot of water for 15 minutes. Drain and finely chop.
2. Melt 2 tablespoons butter in a skillet over low heat, and mix in all vegetables. Cook for 5 minutes.
3. Melt remaining 2 tablespoons butter in a large pot, and whisk in flour. Add half-and-half, coconut milk, fish stock, ginger, conch, and season with salt and pepper. Bring to a boil, reduce heat to low, and cook for 20 minutes. Mix in hot sauce and cilantro 15 minutes prior to service.

The perfect weeknight or summer grilling recipe!

 

Ingredients Needed to Make the Jamaican Jerk Chicken Burger

    • 4  boneless skinless chicken breast halves
    • 1 tablespoon Lively Up Lime Jerk Seasoning
    • 2 garlic cloves, minced
    • ½ cup soy sauce
    • 1 tablespoon vegetable oil
    • ½ tsp. black pepper

Directions:

    1. Whisk together the jerk seasoning, garlic, soy sauce, and vegetable oil together.
    2. Pour the marinade max  into a large, shallow dish, add the chicken and turn to coat.
    3. Cover and refrigerate overnight so the flavor really infuses.
    4. Grill the chicken over a medium-hot heat, turning occasionally, until well browned and cooked through, 35 to 40 minutes.
    5. Remove from heat and let rest for 5-10 minutes.
    6. Start building your Jamaican Jerk Chicken Sandwich.

Toppings:

Toppings are critical on this burger.  Because you are getting the smoky hot pepper heat from the jerk sauce, your burger will be next level if you have the right topping to include on the burger.  Here are some of our recommendations:

  • Pineapple – slice up a pineapple and get that on there. Some extra tropical flavor, and the pineapple really balances it out.  Extra points if you grill these up as you’ll get a little bit of caramelization!
  • Coleslaw – a traditional slaw is also a good option.
  • Cheese – a PepperJack or a Sharp Cheddar are good options. A sharp cheese is definitely necessary to hold its own against the jerk seasoning.
  • Garlic Mayonnaise Spread or MayoKetchup will work well (Get the MayoKetchup recipe)
  • Vegetables and Greens – some nice lettuce or spinach is a good option. Also, avocado, onion and tomato will work well.
  • Roasted Bell Peppers- a yellow or red bell pepper is a good addition.

Ingredients Needed to Make Honey Hot Wings

Instructions:

    1. Combine all of the spices together in a small bowl and then coat the chicken with the seasoning mix.
    2. Preheat the oven to 350 degrees and place all of the wings on a baking sheet that has been pre-coated with olive oil.
    3. Cook the chicken until done, approx. 25 minutes.
    4. While baking, mix the hot sauce, white vinegar, cane sugar and honey together.  When the wings are done, coat them with this mixture.
    5. Put the wings back on a sheet pan and cover with aluminum foil.
    6. Bake for 10 minutes more to really infuse the flavors.
    7. Serve with a ranch or blue cheese dressing and celery sticks.

Ingredients needed to make this Jamaican Jerk Burger:

  • 1 lb. Ground Beef
  • 1/2 cup chopped green onion
  • 2 Garlic gloves, finely chopped
  • 2 Tbsp. Sweet n Smoky Jerk Sauce
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions:

  1. Gently mix all ingredients together. Be careful not to overwork the beef as that will make the burgers tougher.
  2. Shape the mix into burger patties, about a ½ in. thick.
  3. Chill the patties in the fridge for about 30 minutes. Or these can be prepped in advance.
  4. Grill or pan fry the burgers over medium high heat for about 5 minutes on each side. Use a little bit of vegetable oil rubbed on grill or pan to counteract stickiness.
  5. Cook to your preference of done-ness.
  6. Let the burgers rest for a bit (5-10 minutes).
  7. Start building your burgers with your preferred toppings and choice of bread.

Ingredients needed for this chicken egg rolls recipe:

  • 12 egg roll wrappers
  • 1 cup cooked and shredded chicken
  • 1/2- 2/3 cup Sweet n Smoky Jerk Wing Sauce
  • 1 cup crumbled blue cheese (4 ounces)
  • 1 cup dry coleslaw
  • Small bowl of water
  • Nonstick cooking spray
  • Blue cheese dressing, for serving

Directions:

  1. Preheat oven to 400 degrees F. Lay egg roll wrappers on a clean work surface. In a small bowl, stir chicken and Sweet n Smoky Jerk Wing Sauce until well coated, using more or less sauce depending on your spice preference. The meat should be moist with sauce.
  2. Begin by placing one tablespoon of the cole slaw on the diagonal of the bottom right corner of one of the wrappers. Next, place 2 tablespoons of shredded spicy chicken evenly on top of the slaw. Spoon 1 tablespoon of the blue cheese crumbles over the chicken. Do not overfill.
  3. To fold: Fold the bottom right corner over the stuffing mixture so that it covers it completely, with the tip of the corner now pointing to the center of the egg roll wrapper. Fold in the bottom left corner, followed by the right, so that you now have formed an envelope. Roll the wrap upward one time, leaving the top left corner open. Wet your index finger in the small bowl of water and press to moisten the top left corner. Now fold that down on top of the filled roll, sealing it like you would an envelope.
    Repeat with remaining rolls.
  4. Place the rolls on a wire rack set on top of a cookie sheet (or just on a greased cookie sheet) coated with nonstick cooking spray. Spritz each roll evenly with nonstick cooking spray. Bake for 12-15 minutes, or until the rolls crisp and turn a light golden brown.

It has a tasty, tangy taste with the added sweetness of mango and enough Habanero heat.  The cumin, mango and habanero play really nicely off the avocado and beans, to make for a Caribbean version of a classic recipe.  Hope you enjoy it as much as we do! If you want a vegetarian version of this wrap, eliminate the chicken and add in a variety of grilled peppers, onions, and zucchini.

Ingredients Needed for this Chicken Wrap:

  • Chicken Breasts, cooked and sliced into strips
  • Tortilla Wraps
  • Avocado
  • 1 Tbsp. Red Beans or Black Beans
  • Lettuce
  • Tomato
  • Green Pepper
  • KooKoo Cumin Wing Sauce, to taste

Directions:

  1. Thinly slice up the Avocado, tomato and green pepper.
  2. Smash some red beans or black beans
  3. Spread some KooKoo Cumin Wing Sauce on the tortilla and layer other ingredients on top.  Roll and enjoy!  For an appetizer, make wraps and slice into 1 inch thick slices.

The muenster cheese is mild and buttery, and has a similiar taste to a mild monterey jack.  This is just a really fun variation on a traditional cheese fries recipe.  The combination of cumin and muenster gives it a totally different feel, but still gives you that warm comfort food feeling.

Ingredients Needed for Cumin Cheese Fries:

  • 1 pkg. frozen french fries
  • 2 tbsp. KooKoo Cumin Wing Sauce, to taste
  • 2 tbsp. Butter
  • 2 cups Munster Cheese, shredded
  • 1 cup milk
  • Salt and pepper (optional)

Directions:

  • Bake or fry your frozen French fries, according to package directions.
  • About 10 minutes before your fries are done, melt butter in medium sauce pan, over low heat.
  • When butter is melted, slowly stir in milk and then stir in KooKoo Cumin Wing sauce. Heat until a little more than warm, but not boiling.
  • Then add cheese and stir until melted and fully combined.
  • Once fries are done, place them on a plate and put cheese mixture on top.

We are in full avocado season down here in the Caribbean and are always looking for great new recipes to serve it up.  After all, there is only so much guacamole one can eat!

If you love the spiciness of jerk seasoning and can’t get enough fresh avocado, you will really like this recipe.   This salad brings the best of the Caribbean to you with the flavors of jerk, lime and rum.  Perfect as a stand-alone meal and great for weekend barbecues.  Pair it with a rum cocktail for a complete meal!

Ingredients:

  • 1- 2 kg boneless chicken chunks
  • 2 tsps. Caribbean Trading Lime Jerk seasoning
  • 1/4 cup Bacardi Rum
  • 1 tsp lime juice
  • 2 ripe avocados, cubed or halved
  • 1 red onion, sliced
  • 2 tomatoes, cut into wedges
  • 1 yellow and 1 red sweet pepper, sliced
  • assorted lettuce leaves

For Vinaigrette Dressing:

  • 3 tbsp vinegar
  • 1 tbsp lime juice
  • 1/2 cup of EEVO oil
  • Fresh Cilantro, chopped

Preparing the Chicken and Avocado Salad:

  1. Marinate chicken in jerk seasoning, rum and lime juice.
  2. Bake at 350 F for 10-15 minutes.
  3. Assemble the salad– finishing off with the cubed avocado and chicken.

Avocados are an excellent source of healthy fats and are particularly beneficial if cutting down on protein and carbohydrate intakes.  They are a good source of fiber and potassium and Vitamins E and B.  This meal hits all the right notes for a healthy and locally sourced meal.

How to Peel an Avocado:

To preserve the area with the greatest concentration of antioxidants, you basically want to peel the avocado with your hands, as you would a banana:

1. First, cut the avocado length-wise, around the seed.
2. Holding each half, twist them in the opposite directions to separate them from the seed.
3. Remove the seed.
4. Cut each half, lengthwise.
5. Next, using your thumb and index finger, simply peel the skin off each piece.

**Tip:  if you are only going to use half of the avocado, store the other half in the fridge with the seed still in it- this will extend the life of your avocado.
