Instructions on Making the Cake needed for the Orange and Strawberry Trifle Recipe:

Cake:

Instructions:

  • Preheat oven to 325 degrees.
  • Butter a Sheet Pan and set aside.
  • Beat eggs & sugar in bowl with electric mixer on high until pale yellow and fluffy, Add remaining ingredients, flour, baking powder, orange zest, olive oil, milk, orange juice and vanilla until well combined.
  • Spoon the batter into pan and smooth on top.
  • Bake about 20 minutes until golden (top will split slightly), and a cake tester comes out clean when inserted. Transfer pan to rack and let cool.
  • Cut into 1 x 1 inch pieces

 

Making the Orange Whip Cream

  • 1 cup heavy cream
  • ½ teaspoon pure vanilla extract
  • 2½ tablespoons confectioners’ sugar
  • 1½ teaspoons orange zest

Place heavy cream and vanilla in a bowl.  Whisk for about 30 seconds, until cream just starts to thicken. With motor running, gradually add the sugar and zest. Increase to speed 3 and beat until soft peaks form. Transfer to a separate bowl, cover and refrigerate until ready to use.

 

Assembling the Orange and Strawberry Trifle:

Build the trifle:

  • Start with an even layer of pound cake in the bottom of a 2-quart trifle dish or clear glass bowl.
  • Spoon 1/3 of the Orange Whip cream onto the pound cake, gently press to force the in between the pound cake pieces, then smooth into an even layer.
  • Top evenly with 1/3 of the strawberries, placing as many against the glass as possible for a beautiful presentation.
  • Repeat with the layering twice more: pound cake, orange whip cream and strawberries, finishing with whip cream on top.

INGREDIENTS TO MAKE THE TEA PASTRY CREAM

  • 1 1/2 cups whole milk
  • ½ cup of CTC Pomegranate Bliss tea
  • 1/2 cup sugar
  • Pinch of salt
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • 2 tablespoons unsalted butter, cut into small pieces

 

DIRECTIONS

In a medium saucepan, combine milk, tea, 1/4 cup sugar and salt. Cook over medium heat until mixture comes to a simmer.

In a medium bowl, whisk together egg yolks, cornstarch, and remaining 1/4 cup sugar. Whisking constantly, slowly pour about 1/2 cup of the hot-milk mixture into the egg-yolk mixture, 1/2 cup at a time, until it has been incorporated. Pour mixture back into saucepan, and cook over medium-high heat, whisking constantly, until it thickens , about 2 minutes.

Transfer to the bowl of an electric mixer fitted with the paddle attachment. Add the butter, and beat on medium speed until the butter melts and the mixture cools, about 5 minutes.

Cover with plastic wrap, pressing it directly onto the surface of the pastry cream to prevent a skin from forming. Refrigerate until chilled, at least 2 hours or up to 2 days. Just before using, beat the tea pastry cream on low speed until smooth (you can also whisk by hand).

Sometimes it is just too hot to have a warm dessert.  Something cool and refreshing really hits the spot.  The strawberry banana pie has strawberries, bananas, pineapple and chocolate!  Yum!  I recently made this for a summer outdoor picnic and it was a fast favorite among the kids.

Ingredients needed to Make the Banana Strawberry Pie:

  • 1 cup Caribbean Trading fudge sauce, flavor of your choice
  • 1 9-inch chocolate cookie pie crust
  • 1 ½ bananas, peeled and sliced
  • 1 pint vanilla ice cream, softened
  • 1 8-ounce can crushed pineapple, drained
  • 2 cups sliced strawberries
  • 1 cup whipping cream, whipped to peaks with 2 tablespoons cane sugar
  • ½ cup chopped walnuts

Instructions:

  1. Spread hot fudge sauce over bottom of crust.
  2.  Arrange bananas over. Spoon ice cream over.
  3. Cover and freeze 4 hours. (Can be prepared 1 day ahead.)
  4. Spoon pineapple over ice cream. Arrange strawberries over.
  5. Top with whipped cream. Sprinkle with nuts.

Serve immediately.

  • Cook rice according to directions, adding the Ginger & Honey Balsamic just before end of cooking. Mix well.

Our very own crewmember Noelia created this recipe and brought it to one of our employee monthly meetings, and you should have seen the staff descend upon them!  They were so good we were all begging her to make more of them.

Ingredients needed for this Donut Holes Recipe:

Salted Caramel Glaze

2 cups powdered sugar
¾ cup Caribbean Trading Sea Salt Caramel Sauce
3 Tbsp milk

Instructions

1. While you mix the batter, start oil heating…it’s fast!
2. Combine all the ingredients for the doughnut holes and blend.
3. When the oil is hot place teaspoons of batter in the4 hoy oil.
4. Fry about 2 minutes or until golden on both sides.
5. Drain on paper towels.
6. Mix glaze ingredients and roll doughnuts in glaze – twice if you like!

Crispy bacon is also delicious mixed into the batter!
